Coda di Volpe, usually used to cut Greek tuff, is vinified in purity by Vadiaperti for this interesting label. Grown at 400m above sea level, with low yields and harvested in the second decade of October, following periodic checks in the vineyard of the degree of ripeness of the grapes. Grapes that are selected already at harvest and transported in perforated plastic boxes of up to 20kg, to avoid damage to the skins. The vinification begins within 3 hours with soft pressing at no more than 0.6 bar.
